SpoBREW - The Competition

I was unable to attend the competition at the Porch on July 9th, but Will was there to represent the Official Tin Can Committee. Our brew of choice for the competition was the hot chocolate porter. We ended up placing third out of seventeen on both the judge's list and the brewer's list. We are pretty happy with the results. Here are a number of links to check out.

SpoBREW - Secondary & Kegging

So a week after our Memorial Day brew day it was time to secondary. This is where things got interesting. Our porter recipe became a chipotle porter using chipotle tabasco and a hot chocolate porter using cinnamon, lactose, and vanilla. We left one amber as is, but added blood orange juice to the other. One IPA was dryhopped with whole leaf Cascadehops and Centennial hops. The other was dryhopped with just Calypso hops.


Ten days after the secondary we kegged all six batches. All six beers tasted pretty good right out of the secondary. I took the chipotle porter and the amber home to carbonate.

SpoBREW - Brew Day Part 1

The Spokane food blog SpoCOOL decided to put on a homebrewing competition. I enlisted my coworker Will as my partner and we set about designing our brew. We quickly decided that we didn't want to rely on one recipe. We chose three recipes to brew to be split into 6 different beers with different additions. We brewed three ten gallon batches on Memorial Day; a porter, amber, and IPA. Here are some pics from the day. A leaky wort chiller required some soldering, but for the most part brewing went off without a hitch.

Firkin Friday


I've been having a fantastic time at Jones Radiator since it opened. They have great beer and something you don't always find at beer bars: a happy hour! They started Firkin Friday last month. The first friday of each moth they are going to have a firkin on tap. Last month, local brewer Chachi from C.I. Shenanigan's brought his cask-conditioned porter. Tomorrow will be a firkin from Two Beers Brewery of their EVO IPA.

Washington Beer Open House 2011

On February 26th, the Washington Beer Commission held an open house at breweries across the state. It is essentially the Washington version of Zwickelmania. The only location in Spokane participating was C.I. Shenanigan's. Shenanigan's is affiliated with The Ram and mostly brews recipes from their brewery. The brewmaster at Shenanigan's gets to experiment with some of his own recipes as well. We got to taste a handfull of beers from the zwickel (what is a zwickel?) while we were there.

Wolf Pack IPA

I didn't post about this recipe earlier because it was supposed to be a gift for the groomsmen in my wedding. I used Amarillo and Cascade hops in this IPA. I tried dry hopping for the first time, which I think turned out well.

Cave Singer Oktoberfest Ale

My goal was to get as much brewing done as possible before I leave town for two weeks at the end of the month. A sale at Austin Homebrew Supply turned yesterday into a double brew day. Since I still had a Kölsch yeast cake, I decided to something with that. That led me to EdWort's Oktoberfest Ale using Kölsch yeast. I decided to buy my grain from AHS because they were having a free shipping special. I started modifying the recipe and came up with something more my size and economical. I tagged on a Wheat Stout kit (on special) from AHS to give me two brews and free shipping.

The brew day had some issues. The 12 pounds of grain for the Oktoberfest overflowed my mash tun. I ended up leaving about .75 pounds of grain out. I must have had some grain balls. I hit my mash temps pretty well and got pretty good efficiency. I started heating up the mash for the wheat stout during the final half hour of the boil. The whole brew day took about 7 hours, but I have 10 gallons of beer bubbling in the closet.

Dragonfly Kölsch

Here is a recipe I came up with to attempt to clone the Firefly Kölsch that McMenamin's used to make. I failed pretty bad on my mashing attempt and added some extract. I'm still trying to effectively do all-grain brews on my stove using an electric turkey fryer. The color is really nice.

Sanke to Cornelius Conversion

After the completing the first tap on my kegerator, I decided I wanted to have some beer on it. My first batch of homebrew wasn't cutting it and I didn't have anything ready to go.

I knew someone who purchased 1/6 barrel kegs from the Iron Horse Brewery. The problem was that I was set up for Cornelius kegs with ball-lock disconnects. I found this helpful video through Keg Connection detailing the conversion.

Two points of interest from my experience. The sanke tap barely fit into my kegerator. If I had to do it again I would get a low profile sanke tap. Second, make sure you put a rubber gasket or O-ring in the liquid out stock of the tap. I had major leakage problems until I did.

Apfelwein (1 Month)

The Apfelwein cleared up and I tapped it on 12/14. Drinkable at this point. Getting better as it carbonates. I got some more apple juice at Costco over the weekend, so I started another batch on the yeast cake of this one after I kegged it.

Apfelwein

I followed up my first brew with something a bit easier (and stronger). I tried this cider that my coworker made. It is delicious and potent. It couldn't be easier to make; sugar, apple juice, and yeast at room temperature for a couple months. I have this stored in my storage room because this one puts off a pretty nasty smell while it ferments. I've got a sleeping bag to hopefully keep it warm enough.

The First Brew - Results

I kegged my first brew a while ago, but it took me a while to get these pictures up. I think this beer was a hit and a miss. It's drinkable, but I don't think the final gravity ever got low enough. It's a little on the sweet side.


Hooked up to the kegerator successfully. Since this picture was taken, I've changed my beer line to 10 feet.

The First Brew - Day 10

On a suggestion from a co-worker, I decided to repitch some yeast to hopefully jumpstart fermentation. I pitched the yeast into my secondary carboy and racked on top of it. Hopefully that will get me closer to my final gravity. I used Safale US-05 yeast for the repitch.
